Chef Stephen begins by blending French grey sea salt and black tellicherry peppercorns together with sage, thyme, coriander, and nutmeg to create a complex array of flavor undertones. He then adds garlic, cayenne pepper, and paprika to give just enough heat to make it interesting without being overwhelming. This Southern inspired seasoning makes great Louisiana red beans and rice, roasts, pork, chicken, as well as skillet and seafood dishes.
